
Overnight oats can make breakfast easier—including those times you want it to go! Naturally sweet grated carrots and almond milk add to the dessert-like taste of these overnight oats. The final texture will depend on how fine you shred the carrots. Smaller threads will melt into the softened oats, while coarsely grated carrots will have more of a crunch. Oatmeal fuels the brain, satisfies hunger keeping your body and mind in full-force throughout the day. Oats also contain choline, which the body needs in order to produce a neurotransmitter called acetylcholine. Acetylcholine helps with both learning and memory.
INGREDIENTS
1 cup unsweetened almond milk
2 tsp Vanilla Complete*
1⁄2 cup rolled oats
1⁄2 cup shredded carrot
1 Medjool date, pitted and chopped
1⁄4 cup raisins
1 tablespoon hemp or ground flaxseeds
1 tablespoon pumpkin seeds
1 teaspoon ground cinnamon
Pinch of ground nutmeg
Pecans or walnuts for topping
INSTRUCTIONS
Combine the almond milk and Vanilla Complete in a small wide mouth glass jar. Add oats, carrot, date, raisins, flaxseeds, pumpkin seeds, cinnamon, nutmeg, and stir to combine. Cover and chill for 2 hours, or up to 2 days. Before serving if it is too thick, stir in plant milk to get the desired consistency. Top with nuts and enjoy!
