Rather than sugar, this recipe uses monkfruit which has no calories, and has anti-inflammatory, anti-cancer properties and may fight infections. There are also jams that are made without sugar but fruit juice. Choose your favorite
jam!
Gluten-Free Thumbprint Cookies, makes 24 cookies

Prep time: 15 minutes
Cook time :12-14 minutes
Ingredients
2 cups almond flour
1/4 cup monkfruit
1 Tbsp psyllium
1 sachet Vanilla Complete*
1⁄4 tsp salt
1⁄4 tsp baking soda
1⁄4 cup melted coconut oil
1 egg
2 Tbsp avocado oil
1 tsp apple cider vinegar
1 tsp vanilla extract
1 tsp almond extract
fruit jam of choice
Directions
1. In a small bowl, whisk the egg with the oil, vinegar, and extracts.
2. In a larger bowl mix the dry ingredients, and stir in the melted coconut oil.
3. Add the egg/wet mixture, mix until combined.
4. Line a cookie sheet with parchment paper. Preheat oven to 350 degrees.
5. Roll pieces of dough into about 1 inch balls and space them out on a cookie sheet.
6. Use your thumb, or an end of a wooden spoon, or a concave shaped measuring spoon to make an indentation to hold the filling. Make sure to not go too deep so the cookie will hold together.
7. Using two spoons get a spoonful of jam on one and use another spoon to slide the jam into place. Fill each cookie center just below the rim.
8. Bake at 350 degrees 12 – 14 minutes. Be sure to let it cool before eating!
