
This can be a go-to dinner creation when having guests that will impress. It is also great if you have a lot of a little amount of various vegetables to use. You can punch it up with some Thai chilies. Other vegetables that go well: celery, zucchini, snow peas, asparagus, broccolini and the like. You can add cooked chicken or shrimp if desired.

Ingredients
Dried Mung Bean Vermicelli, 8 oz
2 TBSP avocado oil
1 sweet onion, sliced
4 garlic cloves, minced
1 TBSP minced ginger
1 tsp Chinese 5 spice powder
2 cups broccoli florets
2 large carrots, peeled and julienned
2 cups quartered brown mushrooms
1 can bamboo shoots, drained
½ red pepper, sliced
! cup cashews (or green beans)
1 scallion, sliced
1/3 cup Tamari or Coconut Aminos
1 TBSP honey or a few drops of stevia
2 tsp olive oil
A few drops of toasted sesame oil
Chopped cilantro as a garnish
Directions
Serve immediately, garnish with cilantro
