Vegetable Stir Fry with Mung Bean Noodles

This can be a go-to dinner creation when having guests that will impress. It is also great if you have a lot of a little amount of various vegetables to use. You can punch it up with some Thai chilies. Other vegetables that go well: celery, zucchini, snow peas, asparagus, broccolini and the like. You can add cooked chicken or shrimp if desired.

Vegetable Stir Fry with Mung Bean Noodles                   

Serves 4
Prep time: 20 minutes
Cook time: 15 minutes

Ingredients
Dried Mung Bean Vermicelli, 8 oz
2 TBSP avocado oil
1 sweet onion, sliced
4 garlic cloves, minced
1 TBSP minced ginger
1 tsp Chinese 5 spice powder
2 cups broccoli florets
2 large carrots, peeled and julienned
2 cups quartered brown mushrooms
1 can bamboo shoots, drained
½ red pepper, sliced
! cup cashews (or green beans)
1 scallion, sliced
1/3 cup Tamari or Coconut Aminos
1 TBSP honey or a few drops of stevia
2 tsp olive oil
A few drops of toasted sesame oil
Chopped cilantro as a garnish

Directions 

  1. Prepare onion, garlic, ginger, broccoli, carrots, mushrooms, pepper. Set aside.
  2. In soup pan boil needed water for noodles. –Add noodles when boiling and set timer.
  3. While waiting for water to boil, combine the Tamari or Coconut Aminos, honey or liquid stevia, and olive oil. (I use a hand-held latte wand) and set aside.
  4. Preheat frying pan on medium high. Add oil and sauté onion until just translucent, add garlic, ginger and 5 spice powder and stir until mixed and fragrant. Add broccoli and cook until starting to turn tender, then add carrots and mushrooms, stir and cover for 2 minutes.
  5. Drain the noodles and add to the frying pan. Add bamboo shoots, red peppers, and cashews (or green beans) and stir to combine. Pour over the Tamari or Coconut Aminos sauce, sprinkle with the scallions and cover for 2 additional minutes.

Serve immediately, garnish with cilantro
