Cranberry Crunchy Chocolate Bark

This chocolate bark with a hint of orange may not last long around the house!
Ingredients:

- 12 oz dark chocolate chips
- 6 ounces twisted pretzels
- 1/2 cup dried cranberries
- 1 tsp orange zest
Instructions:
- Line a large baking sheet (9 x 13) with parchment paper.
- Coarsely crush the pretzels in various sizes in a zip lock bag with a rolling pin or heavy pan.
- Melt dark chocolate chips in a double boiler*. Fill the sauce pan with an inch of water and bring it to a gentle simmer over medium low heat. The heatproof bowl larger than the saucepan for melting the chocolate and should not touch the water. Stir occasionally with a dry rubber or silicone spatula until melted and remove immediately. Make sure no water or steam gets in the chocolate or it will change the texture.
- Immediately stir in the cranberries, orange zest and 3/4’s of the pretzel chunks, and pour on the parchment paper in the pan, about ¼ inch thick.
- Sprinkle the rest of the pretzels on top, and firmly press into the chocolate to adhere.
- Carefully transfer to the refrigerator and allow to chill for at least 30-60 minutes, until cooled completely, then break into pieces. Store in an airtight container at room temperature, or the refrigerator.
*Can be melted in a microwave, 30 seconds intervals, stirring to check if all melted. Overheating can cause the chocolate to seize. Try adding some coconut oil to make it smooth again, as needed.
