Gluten-Free Pumpkin Bars

These bars taste like the classic pumpkin pie and is a healthier version you can make ahead of time. Note that the flours cannot be substituted, or it will not turn out well. Adapted from thecleaneatingcouple.com

Gluten-Free Pumpkin Bars

Prep time: 10 minutes
Cook time: 45 minutes
Serves 9

CRUST
¼ cup ghee, melted and cooled
1 egg
½ cup coconut sugar
1 cup almond flour
1 TBSP tapioca flour
1 tsp vanilla extract
¼ tsp cinnamon
¼ tsp salt

FILLING
15 oz. pumpkin puree (NOT pumpkin pie filling)
2 large eggs
½ cup maple syrup or date syrup
¼ cup Vanilla Complete (choose shakes, vanilla)
2 tsp. vanilla extract
1 ½ tsp Ceylon cinnamon
½ tsp nutmeg
½ tsp ground ginger
¼ tsp allspice

Instructions

  1. Preheat oven to 350 degrees. Line an 8 x 8 pan with parchment paper.
  2. Mix all crust ingredients together with a fork. It will be a loose dough. Put in pan.
  3. Moisten hands with water and spread out as an even bottom layer.
  4. Bake the crust for 10 minutes and remove from oven. Let cool.
  5. In a large mixing bowl, whisk together all the filling ingredients until smooth. Pour on cooled crust and bake for 40-45 minutes until set firm.
  6. Cool completely, put on airtight cover, and refrigerate 8 hours or overnite. (If you make coconut whipped cream, you will need to put the coconut cream or coconut full fat milk in the refrigerator overnight too!).

Serve with a dollop of coconut whipped cream and/or dusting of pumpkin pie spice.

Coconut Whipped Cream
Prep time 5 minutes  Makes 12-16 servings

Ingredients
13.5 oz can of coconut cream or full fat coconut milk, Brands that work well: Thai Kitchen or Native Forest
1 tsp vanilla extract
2 TBSP maple syrup
10 drops of liquid stevia to taste

Directions

  1. Place can of coconut milk in the refrigerator overnight. Do NOT shake to mix the can.
  2. After chilling overnight in the refrigerator to firm the cream at the top, open the can at the top and carefully scoop out the cream into a large mixing bowl, reserving the liquid for other uses.
  3. Add vanilla, maple syrup and 10 drops of stevia, and whisk together until thick and creamy. Taste to see if you want to add more stevia sweetener.
  4. Serve immediately or store in airtight container in the refrigerator.
