
This easy to make dairy free recipe is chock full of plant goodness. The hidden fiber in the plant protein lowers the glycemic index, and the bananas makes it creamy! Perfect treat to celebrate St. Patrick’s Day!
Lucky Green N’Ice Cream
Serves 2
Preparation time, 10 minutes
Ingredients
¾ cup coconut milk
A large handful of baby spinach
A small handful of fresh mint leaves (or a couple drops of mint flavoring)
½ ripe avocado
1 scoop Vanilla Complete*
4 ripe, frozen peeled bananas
4 TBSP dairy-free chocolate chips
2 TBSP roasted salted nuts of choice, optional
Mint leaves for garnish
Directions
1. In a blender mix the coconut milk, spinach, mint, avocado and Vanilla Complete.
2. Add the frozen banana to the mixture and blend until get an ice cream consistency. You may need to add a little more coconut milk to thin, or more frozen banana to thicken.
3. Serve immediately in small bowls. Top with chocolate chips, salted nuts, and garnish with mint leaves.
