Make it a day ahead so it will be ready to serve! It needs no accompaniments!
Prep time: 20 minutes
Serves: 8-10
Crust:
◦ 1 c almonds
◦ 1/2 c shredded coconut
◦ 12 medjool dates
◦ pinch salt
◦ 1 Tb coconut oil
Grind nuts in food processor, add remaining ingredients and process until it holds together. Press into a baking dish.
Filling:
◦ 1 1/2 c sweet potato, cooked
◦ 1/4 c maple syrup
◦ 1/4 c coconut oil, melted
◦ 1 serving Vanilla Complete*
◦ 1 tsp lemon juice
◦ 1 tsp vanilla
◦ 1/4 tsp salt
◦ 1 1/2 tsp cinnamon
◦ 3/4 tsp cardamom
◦ 3/4 tsp ginger powder
◦ 1/4 tsp cloves
◦ 2 Tb coconut flour
Put all in a food processor and process until smooth. Spread into crust, top with shredded coconut, and refrigerate.
