Gain the Health Benefits of Beets!

Are beets included your regular rotation to get the 30 different fruits and vegetables that are recommended to eat in a week? Maybe you think they are high in sugar—they actually have many nutrients and few calories. Maybe preparing the red staining root has you hesitate, but knowing the benefits may motivate you make it more of a staple. They are more abundant starting in November and are in their prime in the winter months so it is a great time to periodically add them to your diet. Here are four reasons to incorporate them in your meals:

They are better tasting when they are young/small. Trim the greens to use soon after purchase or picking one inch above the root so they last longer. They can be juiced, shredded, sliced and eaten raw, pickled, chopped and roasted, or cooked in a soup. They make a great salad addition or as a side dish with other roasted vegetables or with grains. Athletes who want to enhance their performance will drink beet juice 2-3 hours beforehand.
