Fresh Peach Sorbet

It is peach harvest time, and a frozen treat is just what we need to beat the heat! It can be made with frozen peaches, no ice cream maker needed!

INGREDIENTS:

  • 5 medium-size ripe peaches (approx. 4 cups)
  • 2 tablespoons raw honey
  • 2 teaspoons lemon zest
  • 1/4 cup vanilla almond milk
  • Pinch of salt

DIRECTIONS:

  1. Peel (you can make this with the peel, it adds a little more texture and more nutrition!) and slice peaches into small chunks, discard pit. Arrange in a single on a cookie sheet and freeze until solid, about 3 hours. If using frozen peaches, cut down to 1 inch chunks.
  2. Transfer peaches to heavy duty food processor, add the rest of the ingredients and pulse to break down the peaches, then blend until creamy and smooth. You may need to pause to scrape down the sides for even blending.
  3. Taste the sorbet, add more honey if needed. If not creamy, add a little bit more plant milk, a Tbsp at a time to get desired consistency.
  4. Serve immediately if want a soft serve texture, or transfer to a loaf pan, cover and put in freezer about 4 hours. If it is too hard to serve later, let set for 10-15 minutes to soften.

Note: after a month in the freezer, it may start to form ice crystals.

This recipe can work with mangos or blueberries.

You may want to double the recipe so there is plenty to serve!
