Quinoa-Mushroom Frittata With Fresh Herbs

This is a flavor rich dairy-free fritta (a gluten-free quiche without a crust) with added protein will become a go-to!

Serves 6.

Serve with a tomato salsa and a side dish of pear & arugula salad topped with coconut sugar candied walnuts, and a cluster of grapes.

Quinoa-Mushroom Frittata with Fresh Herbs

Dairy Free option: Vegan Parma-Cheese, 5 minutes prep.

·        1 cup unsalted cashews

·       4 TBSP nutritional yeast or debittered brewer’s yeast

·       1 tsp sea salt (or omit salt if using salted cashews)

·       1 tsp garlic powder

·       ½ tsp dried Italian herbs

Pulse ingredients in a food processor until nuts are a fine texture, do not over process.

In a small bowl mix the ½ cup with the zest of a half of lemon, then lightly drizzle some olive oil and stir and it will clump. The rest can be stored for later use in a jar in the refrigerator for up to a month.

Quinoa-Mushroom Frittata Ingredients

·       ¾ uncooked quinoa (or 1 ½ cups cooked)

·        1 cup sliced fresh mushrooms

·       4 green onions, thinly sliced

·       2 cloves finely chopped garlic

·       6 large eggs

·       ¼ cup chopped fresh basil

·       2 TBSP chopped fresh chives

·       1 tsp fresh thyme leaves

·       ¼ tsp black pepper

·        ½ cup vegan Parma-Cheese

·       ¼ cup pitted olives, chopped

·        olive oil

Directions

Rinse the quinoa well and cook according to directions.

While quinoa is cooking, sauté mushrooms, garlic, and white part of green onion in olive oil. When quinoa has cooked, remove from heat, drain any excess water, stir in the mushroom mixture, the rest of the green onion, herbs, pepper and mix well.

In a large bowl whisk the eggs, stir in the quinoa mixture. When it is combined, stir in the parma-cheese.

Preheat the broiler with the rack on the second level from the top.

Coat a medium ovenproof skillet with a thick layer of olive oil. Place on medium high heat on the stove. Pour in the egg mixture, and sprinkle with olives. Cook for 2-3 minutes without stirring.

Place under the broiler, and cook for 3-4 minutes until the top is lightly browned and the eggs have firmed up in the center. Remove from the oven, and let it rest for 3 minutes. Loosen the edges with a spatula, cut into serve wedges, and serve immediately.
