Chocolate Chia Orange Pudding Mousse

Chocolate and St. Valentine’s day go together. This gluten and dairy free chocolatey treat is a creamy with lots of antioxidants. It is so healthy and satisfying you could even serve it for breakfast!

Chocolate Chia Orange Pudding Mousse
Serves 4,  Prep time 10 minutes, chill 2 hours

1 ¾ plus ¼ cups plant milk*
2 Tbsp fresh squeezed orange juice
3 Medjool dates, pitted and *soaked
1 tsp Tamari (wheat free soy sauce)
½ cup chia seed
½ cup coconut cream (from a 13.5 ounce full fat can of coconut milk)
3 tsp orange zest, divided
1/3 cup unsweetened cocoa powder
1 tsp vanilla extract 

  1. Rough chop the Medjool dates, place in high powered blender with juice of half an orange and enough plant milk enough to cover. Add the Tamari and let soak to soften.
  2. Zest the half of orange, add half to blender and reserve half for garnish.
  3. In a medium size bowl add the rest of the plant milk and the chia seed, stir to mix, and let it set for 5 minutes. Stir it again to prevent clumping.
  4. Open the can of full fat coconut milk and scoop out the solid white cream on top (about a ½ of a cup) and put it in a high-powered blender. Reserve the liquid for another use (smoothie, a curry) or see note below.
  5. Pour the chia blend into the blender. Add the cocoa powder and vanilla extract and blend until smooth.
  6. Put into serving dishes, cover and chill ideally 2 hours to thicken. Garnish with orange zest, and berries of choice.

Note: to double the servings, you can add a ripe peeled banana and the rest of the coconut milk, doubling the cocoa powder and vanilla and blend until smooth. If it needs to be sweetened, add some maple syrup to taste.
