
This easy healthy lunch comes together in 15 minutes, no cooking required. This recipe can be made completely vegan gluten and oil free!
Time: 15 minutes | Serves 4
Ingredients:
1 can white beans (15 oz), rinsed
2 medium avocados
1 garlic clove, minced
1/2 lemon, juiced
1 tsp stoneground or dijon mustard
1 tsp coconut aminos
1 tsp maple syrup, or 1 TBSP honey
1/4 cup celery, chopped
1 small handful fresh dill, chopped; or 3 tsp dried dill
4 pieces of bread, toasted
Fresh ground black pepper
4 thin slices of red onion
4 cups baby lettuce, or cucumber
Roasted red peppers in a jar
Alfalfa sprouts, optional
Directions:
Tip! If your avocados are not ripe, wrap them in parchment paper and put them in the oven at 200 degrees for 10-30 minutes depending on its initial ripeness.
