
Colcannon is a traditional Irish dish made of smashed white potatoes, cabbage or kale, leeks and plenty of butter. It is a common dish for St. Patrick’s Day. The use of sweet potatoes provides more nutrition, fiber, and flavor!
Serves: 4-6 | Prep time: 15 minutes | Cook time: 35 minutes
Ingredients:
1 lb. sweet potatoes, steamed
1 lb. cabbage and/or dino kale coarsely chopped
1 large onion, chopped
4-5 cloves garlic, roasted or crushed
1 cup broth
½ cup flat leaf parsley, roughly chopped for garnish
1 tsp salt
¼ tsp black pepper
2 tbsp avocado oil
Dollop of Ghee
3 green onions, cut diagonally

For variation, can substitute half the sweet potatoes for parsnips.
One can garnish with crumbled cooked bacon, too!
