Sweet Potato Colcannon

Colcannon is a traditional Irish dish made of smashed white potatoes, cabbage or kale, leeks and plenty of butter. It is a common dish for St. Patrick’s Day. The use of sweet potatoes provides more nutrition, fiber, and flavor!

Sweet Potato Colcannon

Serves: 4-6 | Prep time: 15 minutes | Cook time: 35 minutes

Ingredients:

1 lb. sweet potatoes, steamed
1 lb. cabbage and/or dino kale coarsely chopped
1 large onion, chopped
4-5 cloves garlic, roasted or crushed
1 cup broth
½ cup flat leaf parsley, roughly chopped for garnish
1 tsp salt
¼ tsp black pepper
2 tbsp avocado oil
Dollop of Ghee
3 green onions, cut diagonally

Directions:

  1. Scrub sweet potatoes, remove blemishes, peel if desired. Steam by putting them in an Instant Pot on a trivet with a cup of water, and set on high 20 minutes for medium sized, 30+ minutes for larger.
  2. In a large skillet cook cabbage &/or kale, onions and garlic in broth over medium heat until tender. Top with parsley and remove from heat.
  3. When the sweet potatoes are tender, move aside the greens in the skillet to make room for the sweet potatoes, and mash them with the avocado oil and season with salt and pepper to taste.
  4. Combine the sweet potatoes with the cabbage/kale and onions, Add salt and pepper to taste and mix well. Reheating mixture if necessary.
  5. Just before serving individual portions, make an indentation in the center and add a dollop of ghee, and garnish with the green onions.

Notes & Tips:

For variation, can substitute half the sweet potatoes for parsnips.

One can garnish with crumbled cooked bacon, too!
