Watermelon Cake with Coconut Frosting

This patriotic looking dessert is refreshing on a hot summer’s day. The “cake” is the actual watermelon, so no baking needed! This recipe is adapted from Creative Green Living to make it a healthier version with added plant protein and fiber lowering the glycemic index.

Ingredients
1 medium-large seedless watermelon
2 cans Trader Joe’s coconut cream*
1/4 tsp almond extract
1/4 tsp vanilla extract
2 sachets or scoops of Vanilla Complete
2 cups fresh blueberries**
1 cup fresh raspberries**
1/4 cup fresh blackberries**
1 large fresh strawberry**

Directions:

  1. In a large mixing bowl add 2 cans of Trader Joe’s coconut cream and the extracts and blend until combined. Add the Vanilla Complete and mix on high until smooth. Put the frosting in the refrigerator to firm up.
  2. Cut away the rind of the watermelon into the desired cake shape creating 2 stackable rounds. Cover with paper towels to dry the excess moisture to make it ready for the frosting.
  3. Spread about ½ cup of the frosting on the bottom cake layer. Cover with a layer of blueberries and spread about a ½ cup of frosting to cover them and add the top watermelon layer.
  4. Frost the sides and the top and garnish the top with the berries. For best results, refrigerate it another 1-2 hours for the frosting to set.
  5. Present the lovely creation, slice, serve and enjoy!

*Trader Joe’s brand is thick and creamy throughout the whole can. If that is not available you can get 4 cans of full fat coconut milk and refrigerate it for 6 hours, then scoop the fatty part out and use that in place of the coconut cream

**choose organic for berries, especially strawberries which otherwise are saturated with toxic chemicals harmful for health.
