Sweet Potato Toast Made Easy!

Sweet Potatoes as they are called in US grocery stores are considered a super food for their excellent source of beta carotene, antioxidants and fiber. They are a yam with a reddish-brown skin and flesh that can be orange, white or purple. True sweet potatoes are more starchy and do not hold together as well as yams do for this recipe.

Baked Sweet Potato Toast

INGREDIENTS
2 large sweet potatoes with a uniform round shape, scrubbed
Avocado, Coconut or Olive Oil cooking spray
Sea salt and dash of pepper to taste.

DIRECTIONS

1. Preheat oven to 425º
2. Line cooking sheet with parchment paper
3. Cut off the ends of sweet potatoes to make a more flat bottom for the toast
4. Cut sweet potatoes lengthwise 1/3 to ½ inch thick with a sharp knife or use a mandolin
5. Either lightly spray both sides with the cooking oil spray and season. Or place slices in a large bowl, drizzle with olive oil and seasonings and toss to coat
6. Place on cookie sheet with parchment paper, cook for 5 minutes and turn over

They should be just fork tender.

7. Serve warm with your favorite topping, or let cool and store in an airtight container and use within 5 days, or freeze them on a cooling rack then place in a freezer bag. Just pop them in the toaster to reheat.

Make a bottom layer spread of nut butter, hummus, or smashed avocado and add desired toppings, or you could top with egg, chicken, or tuna salad.

Some toppings ideas include,
Sweet: sliced fruit or berries, coconut flakes
Savory: chopped greens, salsa, an egg (fried or hard boiled), chopped celery, sliced cucumbers, radishes, sprouts, peppers,

NOTE THIS SHORTCUT: You can pop in slices of yam in a toaster a couple of times if you do not have any baked ones on hand.
