Sweet Potatoes as they are called in US grocery stores are considered a super food for their excellent source of beta carotene, antioxidants and fiber. They are a yam with a reddish-brown skin and flesh that can be orange, white or purple. True sweet potatoes are more starchy and do not hold together as well as yams do for this recipe.
INGREDIENTS
2 large sweet potatoes with a uniform round shape, scrubbed
Avocado, Coconut or Olive Oil cooking spray
Sea salt and dash of pepper to taste.
DIRECTIONS
They should be just fork tender.
Make a bottom layer spread of nut butter, hummus, or smashed avocado and add desired toppings, or you could top with egg, chicken, or tuna salad.
