
This is a tasty low carb high fiber alternative to potato hash browns. Fresh grated cauliflower and broccoli is best, but it will work with frozen cauliflower and broccoli rice. You can make all cauliflower or all broccoli if you don’t have the other. If you want to make it more substantial, add some grated sweet potato or carrots.
Makes 4 servings, 10 minutes prep time, 40 minutes baking time
Ingredients:
3 cups grated cauliflower, medium head
½ tsp sea salt
2 cups broccoli florets, lightly steamed and riced
¼ cup yellow onion, minced
1 tsp. dried basil
¼ tsp. sea salt
1/8 tsp. garlic powder
1/8 tsp black pepper
1-2 eggs
2 green onions, chopped
Nutritional Yeast
(If you prefer to bake the patties instead of pan fry, preheat oven to 400 degrees)
If baking, line a cookie sheet with parchment paper. Divide into 8 equal portions and bake for 35-40 minutes. Let cool for 5 minutes.
Garnish with green onion (or chives), and sprinkle with nutritional yeast for a cheesy flavor.
Keeps in the refrigerator 5 days. Can be wrapped and frozen. Recrisp in a 350 degree oven.
