Gluten-Free Chocolate Protein Donuts

Prep time: 10 minutes, Cooking time: 15 minutes
Servings: Makes 6 regular size donuts

Did you know June 4th is national donut day? I make sure that my doughnuts are gluten free, baked, sweetened with applesauce and plant protein powder!  June is also Brain Health Awareness Month, and both chocolate and cold water washed soy are good for the brain, as is the high fiber found in the protein powder used in this recipe.  Who knew a donut can be healthy?!!

Donut Ingredients:
2 eggs
4 TBSP Vanilla Almond Milk, or plant milk of choice
2 TBSP almond butter
1/8 cup applesauce (or substitute double the optional sweetener amount)
½ cup almond flour  OR   1/3 + 1 TBSP of oat flour*
1 TBSP carob or cocoa powder
1 tsp baking powder
¼ cup unsweetened cocoa powder
1 scoops/sachets Chocolate Complete
Optional: 1 TBSP maple syrup or 2 TBSP coconut sugar if you want to omit frosting.

  1. Preheat oven to 350 degrees. Spray donut pan with coconut oil.
  2. Mix together whisking with a fork the eggs, plant milk, almond butter and applesauce until smooth.
  3. Add the rest of the ingredients and stir until combined. (*you can make your own oat flour by putting rolled oats in a food processor and making into a powder)
  4. They’re done when they spring back to the touch. Cool on a wire rack, and add frosting if desired.

Frosting Ingredients:
1 scoop Vanilla (or Chocolate) Complete
Splash of plant milk to desired consistency
Optional:  add orange zest
