
Why do you need to use leftover rice? Because the rice has a chance to dry out a little so it will not become a sticky or gummy texture. You can use leftover veggies too, or add your favorites, e.g. broccoli, peas….If you want more vegetables, or don’t have enough leftover rice, you can substitute half with cauliflower rice.
4 cups cooked leftover rice (best kind: long-grain white)
1 small onion, diced
1 cup carrot, cubed
1 celery stalk, diced
2-3 cloves garlic, minced
1 1/2 piece ginger, minced
1/2 cup pineapple chunks, frozen or canned (drained)
2 TBSP avocado oil and dash of toasted sesame oil
2-3 eggs
1 cup cubed cooked chicken, (or shrimp, ham)
Black pepper, fresh ground
Sea salt
Chopped green onions
1/2 cup chopped Kim Chee (optional for spiciness) or dash of white pepper
Dash of Tamari or coconut aminos to taste
Fold the rice with the vegetables, seasoning with salt and pepper*. Add the Kim Chee (*or white pepper) and chopped green onions and serve immediately. Serve with tamari or coconut aminos to season further.
