Instant Pot Salmon Filet and Steamed Vegetables

This gluten-free, AIP complaint, nutritious and quick one pot meal can be ready in less than 30 minutes!

Prep time: 10 minutes
Cook time: 10 minutes
Equipment Needed: Instant pot, wire trivet, heat proof dish for salmon (that doesn’t touch the sides of the Instant pot), steamer basket
Serves 2

Fish Glaze:
2 Tbsp coconut aminos (or Tamari)
1 tsp zested ginger
1 clove garlic, minced
2 Tbsp fresh dill, chopped (or 1 Tbsp dried dill)
Zest of half a lemon
1 cup water
2 fresh/unfrozen salmon fillets. Medium (5-7 oz)

Vegetable glaze:
1 Tbsp extra virgin olive oil
1 Tbsp coconut aminos
½ lime, juiced
1 clove garlic, minced

Vegetables:
2 cups broccoli florets
2 cups cauliflower florets
1 large carrot, peeled and sliced
1 cup mushrooms, sliced
Capers, lemon wedges

Sea salt to taste.

Directions:

  1. In a small glass dish, make the fish glaze, combining well (I use a handheld latté wand).
  2. Put in a cup of water in the Instant Pot, set the wire trivet. Put the salmon in a heat proof dish that can set inside the Instant Pot on top of the wire trivet without touching the sides. Spoon the glaze over the salmon and place in the Instant Pot. Lock the lid, close the vent, and cook on high for 2 minutes.

While the salmon is cooking:

  1. Make vegetable glaze in the same glass bowl that had the fish glaze. Mix well.
  2. Chop broccoli and cauliflower into fork sized bites. Do the same for the carrot and mushrooms (about the thickness of the coconut aminos cap). Mix the vegetables.
  3. When the Instant Pot is done with the partial cooking of the salmon, do a quick release. Put in the steamer basket, add the vegetables, and drizzle the vegetable glaze over the top. Add a sprinkle of sea salt. Reseal the lid, close the vent, and set it to high pressure 0 minutes. That will bring it up to pressure and have the veggies be al denté. Once the timer goes off, release the steam (I take turns holding the top of the plate over the releasing steam to warm them.)
  4. Remove the steamer basket and set aside. Plate the salmon filets and pour the glaze in the dish over the fish. Plate the veggies. Add capers on top of the salmon. Serve with lemon wedges and a dinner salad.
