This is a super simple recipe that is a hit with the crowd. It is as delicious as it looks, and a healthier dessert!
1 container of So Delicious CocoWhip
1 8 oz. package of unsweetened shredded coconut
1 cup blueberries*
2 cups salted macadamia nuts
3-4 cups strawberries*, topped and sliced into thirds lengthwise
6-8 ripe bananas, peeled and sliced into discs
In a rectangular glass dish, cover the bottom with the CocoWhip to thickness desired.
Coat the surface with a thin layer of coconut flakes.
Put in a pattern of stars with the macadamia nuts in the upper left corner, proportional to the American flag (about 1/3 of the width and ½ of the height) leaving room for the blueberries to frame them.
Frame the box for the stars with blueberries. Sprinkle blueberries around the macadamia “stars” in the rectangle area to fill in the “sky”
Cut bananas into discs and put in bowl. Squeeze some lemon juice over them and toss to coat to help avoid browning.
Starting at the top right of the star section, start a red stripe laying the strawberries end to end
NOTE: you may want to have space between the strawberries’ and banana’s row so you have enough fruit.
Next create the white stripe with banana discs. Optional: you may want to alternate some macadamia nuts with the bananas so everyone will get some nuts!
Continue alternating the strawberries/red stripe, and the bananas/white stripe to the bottom.
When you have finished topping with the fruit and are satisfied with the spacing, gently press the fruit into the coco whip so they hold in place. Cover and refrigerate until ready to serve.
*Other popular fruit that could be used instead or in combination are raspberries, cherries for the red (cut the cherries in half), and blackberries for the blue.
