Want a salty or sweet snack? Or both?

Want a healthy snack while enjoying a movie? This combination gives a high fiber, is protein packed, and adds more veggies to your day! Be careful, it could get addictive!  Make the honey roasted chickpeas ahead of time, and when you feel like eating popcorn, make the cauliflower popcorn recipe so you can serve it hot, combine the two and serve for a sweet and salty snack!

Honey Roasted Chickpea Poppers

1 can chickpeas (Garbanzo Beans)

1 ½ tsp baking soda

1 Tbsp honey

1/2 Tbsp olive oil

1 tsp sea salt

Optional: 1 tsp. cinnamon

 

Rinse chickpeas in colander until no longer foamy. Place in a bowl and sprinkle with baking soda, and toss to combine. Heat them in a skillet with medium heat for 2-3 minutes until beans are hot. Transfer them to a bowl and cover with cold water. Roll them between your hands to remove most of the outer skins. The skins will float to the top, pour them off and drain.

Preheat oven to 375 degrees.

Line a baking sheet with parchment paper, and  pour the rinsed, deskinned and drained chickpeas and spread as a single layer. Bake for 45 minutes. If they are not crunchy, cook for an additional 5 minutes.

While they are baking, whisk together in a large bowl the olive oil and honey. Add the baked chickpeas and toss to coat. Return them to the parchment paper and bake for an additional 5-10 minutes, until caramelized. Sprinkle with sea salt (or sea salt with cinnamon) and let cool to room temperature. Store in airtight container.

 

Cauliflower Tender Poppers

1 large cauliflower head

2 Tbsp olive oil

1 Tbsp white balsamic vinegar

½ tsp garlic salt

¼ tsp turmeric

Dash of black pepper

 

Cut cauliflower into florets about the size of a walnut (they will reduce when cooking).

Preheat oven to 400 degrees.

Whisk olive oil, vinegar and spices together, and toss florets in the mix to coat.

Pour in a single layer on a parchment paper lined baking sheet. Spread the pieces apart.

Stir every 10 minutes, and remove when they are a golden brown (at least 20 minutes, it depends on the size of the pieces).

Serve while warm. You can add a sprinkle of nutritional yeast on top for a cheesy taste.

For a salty & sweet protein snack, mix with the Chickpea Poppers!
