Balsamic Butternut Squash with Kale

Here is a yummy recipe to get in more greens with calcium rich kale. Rather than a holiday dish of just sweet potatoes, add butternut squash for less sugar and more vitamin A, E, calcium, potassium, magnesium. The kale has a nice crispy texture that people will be wanting more!

Balsamic Butternut Squash with Kale, serves 6

Prep time: 25 minutes
Cook time: 50 minutes

Ingredients
2 sweet potatoes
½ fresh lemon, squeezed
2 TBSP coconut oil
¼ tsp sea salt
2 bunches kale, destemmed and rough chopped
1 butternut squash, peeled, seeded, cut into 1-inch pieces
1 yellow onion, cut into ½ inch pieces
3 TBSP balsamic vinegar
2 tsp avocado oil
1 tsp. coconut sugar, optional
Ground salt and pepper to taste

  1. Preheat oven to 350 degrees. Wash and bake the sweet potatoes in a covered glass dish on the lower rack. Set timer for 45 minutes, and take out of oven when they are fork tender. (Or steam in the Instant Pot 15+ minutes depending on size or if cubed)
  2. Destem washed kale and rough chop or tear into bite size pieces. Blend together the lemon juice, coconut oil and sea salt. Massage into the kale leaves, set aside.
  3. Peel the butternut squash, deseed. Cut the squash into 1-inch pieces and place in a large mixing bowl.
  4. Cut the onion into ½ inch pieces, place in bowl with squash. Pour over the balsamic vinegar oil mixture and toss to coat.
  5. Spread the squash in a single layer on a baking sheet. Add ground salt and pepper. Place on the top rack of the oven. They should take about 40 minutes to turn a nice golden brown.

When the sweet potatoes are cooked and taken from the oven, increase the temperature to 400 degrees for the squash to finish cooking.

  1. In a large glass rectangular dish, smash the sweet potatoes on the bottom of the dish to make a bottom layer. Use a knife to cut the skin to smaller pieces. Add ground salt to taste.
  2. When the squash is roasted and tender, toss them with the kale leaves, and place the combination in the rectangular dish on top of the sweet potatoes. Return to the oven for ten minutes for the kale to be heated and crisped on top.
