Instant Pot Deconstructed Cabbage Rolls

Instant Pot Deconstructed Cabbage Rolls, serves 8
Prep time: 20 minutes  Cook Time: 25 minutes

Ingredients
1 TBSP. olive oil
1 large onion, chopped
3 large garlic cloves, 2 minced; and one grated at the finish
3 carrots, peeled and diced
1 lb. ground meat of choice
2 tsp. oregano, dried
2 tsp. thyme, dried
1 ½ tsp. sea salt
2 lbs. cabbage, coarsely shredded
1 ½ cup low sodium stock
2 cups brown rice, rinsed
7 oz jar tomato paste, low sodium
2 18 oz jars diced tomatoes (use a full one and half of the second) low sodium
1 small bunch parsley, chopped

Directions:

  • Assemble ingredients needed. Turn on Sauté, when hot add oil and coat bottom. Add onion and stir until just translucent, about 2 minutes. Add garlic and carrots, and cook another minute.
  • Add ground meat and sprinkle on the spices. Stir and break up the meat into smaller pieces as it cooks/browns for 4 minutes. There may be some pink, It will finish cooking when sealed.
  • Add cabbage and stir until combined. THIS IS THE END OF THE STIRRING.
  • Add stock.
  • On top of the cabbage in the center part, place the rice.
  • On top of the rice layer put the tomato paste and the diced tomatoes to cover the rice.
  • Close the lid, seal the vent, and set to pressure cook on High for 22 minutes.*
  • When complete release the pressure.
  • Open and add grated garlic to the top, and chopped parsley (or dill), and stir to combine. If the rice is al dente, let the dish sit and it will continue to cook.

Tips
Sauté under a range hood fan, and at the conclusion vent outside since onions and cabbage smell strong.

If the stock and/or the tomato products are not low sodium, adjust the amount of added salt.

If you prefer to use white rice, set the pressure cooking to 10 minutes. Just make sure the rice used is not precooked.

*While it is cooking, prepare some side dishes of roasted potatoes and a sliced cucumber salad with a nondairy yogurt and fresh dill dressing.

Can freeze in a sealed container.  Thaw in a pan on a stovetop on low.
